Easy Pumpkin French Toast- Toddler Approved

Happy weekend, friends! It appears I’m continuing on the Fall trend with a pumpkin recipe; this is the last weekend of August after all! Plus, everything pumpkin is delicious. So, let’s reward ourselves for making it to the weekend with an easy, tasty breakfast that our toddlers will (hopefully) not throw on the floor. Read on for the recipe:

Pumpkin French Toast

Ingredients

*recipe makes 8 slices

  • 2 Eggs
  • 1/3 cup Pumpkin Puree/Packed Pumpkin
  • 1/2 cup Almond Milk
  • 1/2 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 Pumpkin Pie Spice
  • 1 tsp Pure Vanilla Extract
  • 8 slices Whole Wheat Bread
  • Pure Maple Syrup

How To

  • Whisk all ingredients in a bowl or blender
  • Coat slices of bread with mixture on each side
  • Cook on a griddle or flat pan for about 3-4 minutes on each side (or until cooked through)
  • Serve with butter and maple syrup
